Summer is off to a great start! We’ve had quite a heartening response to our initial wine club offer. It’s been amazing seeing all of you join us on this wine journey and we can’t wait to hear what you’re thinking about June’s selections. Looking forward to next month, we’re planning a summer vacation. While we’re too busy to actually travel anywhere with the launch of the wine club and planning for the Serafino buildout, we thought it would be nice to let our palates jet-set to Italy. Stay tuned to see what treasures we find.

The geeky side of things:

While the Les Paillières estate traces its roots back over 500 years, it wasn’t until the 1990s that this winery was put back to its original glory. Purchased by the Brunier brothers of the famed Vieux Télégraphe in Châteauneuf-du-Pape and none other than the man responsible for importing quality French wine to California himself, Kermit Lynch, they began an extensive restoration project. Today, with a reinvigorated focus on terroir and organic farming, Kermit and the Bruniers craft three wines; two Grenache focused red blends from two distinct vineyard parcels, and this stunning Rosé that you have before you. Composed of 45% Cinsault, 45% Grenache, and 10% Clairette from younger vines grown in clay and limestone soils. The wine is made by direct press rather than by the saignée method, minimizing the time the juice interacts with the grape skins leading to the exceptionally pale color, and undergoes full malolactic fermentation lending this Rosé a creamy texture.

The geeky side of things:

Yves cut his teeth working as an oenologist at several notable wineries around the world, namely Marris Wines in Australia, Mantanzas Creek in California, and Neudorf Winery in New Zealand. After his stints abroad, Yves returned to his home country of France where he was able to find and purchase 25 contiguous hectares of hillside vineyards. The other vignerons in the area, who sell to the local cooperative, had no interest in these steep hillside vineyards since they require so much work. But for Yves Falmet, whose family comes from the Côtes de Barre in Champagne, tending to steep hillside vineyards is just a way of life.

This wine is 100% Mourvèdre grown on stoney limestone soils in three parcels of his hillside vineyards. It is also 100% destemmed with pump overs happening twice daily before being aged for two years in tank. It is left unfined but does undergo a light filtration process before bottling.
